1. Slice the chicken breasts in half horizontally (two flat pieces from each chicken breast), and then pound them flat. Coat the chicken with Amazing Taste Chicken seasoning.

2. Pounding is easy with plastic wrap on both sides with a plastic kitchen bag. Then slam the meat with a kitchen mallet or whatever heavy object worksl

3. Heat the oil in a skillet and sauté the chicken on MEDIUM-HIGH heat. After cooking the chicken for about 2 minutes on each side, add in the onion, pepper, eggplant, zucchini, tomato and garlic.

4. Saute all the ingredients together for another 3 or 4 minutes, or until the onions become translucent, and serve.
